Also known as 'Sun Chokes', this perineal tuber produces beautiful tall stalks of yellow sunflower looking flowers in early fall. Delicious edible tubers are ready to enjoy in late fall thru the winter. While closely tasting like a potato they are well known for their ability to lower blood sugar. These tubers are prolific and will produce a large amount of tubers every year. **Please note that you need to plant them in a location where you don't mind them taking over and spreading (a great problem if you want lots of food!). If their invasive behavior does not work for you, they will also do well in a large pot or container. With this method the container would need to be insulated in cold weather.
